Meals for Patients with Dysphagia

Blossom Foods

Chef Aeschbach worked with Blossom Foods to develop a line of meat and vegetarian dishes. This line of modified textured food for people with swallowing issues (dysphagia) was developed with a staff of speech pathologists, dietitians and physicians. In addition to developing the recipes in the test kitchen, Chef Aeschbach conducted tasting panels with the team. Meals include BBQ Beef Briskit, Tamales and Pasta Alfredo. Blossom Foods is contracted with Sutter Healthcare to provide 600 delicious pureed meals a day to local hospitals. They are testing direct-to-consumer options, and expanding beyond the Bay Area. Mumbai-based Food Product Company Acquires brand with Indian food developed by Chef Aeschbach

Mumbai-based ADF Foods Ltd. has acquired San Francisco's Elena's Food Specialties, a company specializing in ethnic frozen foods. Chef Aeschbach developed Indian wraps and samosas for their "Soul" brand.

A Taste of Cuba Soups

A Taste of Cuba

Chef Aeschbach helped A Taste of Cuba commercialize a line of authentic Cuban soups from recipes handed down from owner Ana Maria Amato's great-grandmother. These all-natural traditional soups are available in four varieties: Frijoles Negros (Black Bean Soup), Jigote (Ground Beef Soup), Lentejas (Lentil Soup) and Chicharos (Split Pea Soup) and were featured at the Summer Fancy Food Show in New York City. Chef Aeschbach created small samples in a manufacturing facility then did the scale-up for large scale manufacturing.

New line of healthy frozen foods

Cedarlane Natural Foods, Inc.

Recently, Chef Aeschbach developed new products for Cedarlane Natural Foods line of Dr. Sears Zone™ frozen foods. He developed over 30 RTE (ready to eat) meals, fresh salads and other deli case items. For these products he devised specifications, manufacturing procedures, presented to clients such as Wal–Mart, Sam's Club, Kroger's and Safeway and supervised start-up.

Chef Aeschbach also converted small batch recipes of soups from Fresh Choice Restaurants to production formulas and supervised scale–up production.
